Relish: 1/2 cup diced, peeled mango, 1/2 cup chopped peeled kiwi fruit, 1/4 cup chopped fresh cilantro, 1/4 cup fresh orange juice
To prepare salmon, combine first four ingredients in a large zip-top bag. Add fish to bag; seal. Marinate for ten minutes, turning occasionally. While fish marinates, heat grill pan or large non-stick skillet over medium heat. Remove fish from bag, discarding marinade. Coat pan with cooking spray. Add fish and cook five minutes or until fish flakes easily when tested with fork. While fish cooks prepare relish. Combine mango and remaining ingredients. Serve over fish. Serve dish with couscous
